5 Toddler Breakfast Ideas
If you’re like me, you want your little one to start the day with a healthy, and balanced breakfast. If you’re also like me, you may quickly run out of ideas because let’s face it, how many ways can you scramble an egg?
School is back in session, and the need for fast meals are more important than ever. I’ve included 5 breakfast favorites, but with a little razzle dazzle. These are everyday breakfast items, but with a twist to add a little excitement to meal time.
Blueberry Muffins
Blueberries are a staple in our house, sometimes buying two large containers at Costco at a time, so we always have plenty on hand. I loosely followed a recipe I found on Pinterest. I can not find the exact one, but I’ve found one with very simple ingredients, here. Blueberry Muffins are so easy to make, especially since you can find most ingredients in your fridge or pantry. All you need is flour, baking soda, blueberries (fresh or frozen), butter, eggs, sugar, and milk. Some recipes call for cinnamon or lemon zest, but those can easily be omitted if you prefer.
Sausage, Egg, and Cheese
I often make Mia eggs, sausage, and toast. She eats it with no problem, but it always feels a little boring. So, I decided to make it into a breakfast sandwich, and she LOVED it. I think she particularly enjoyed having multiple textures and flavors and once. I boiled and then browned a piece of smoked turkey sausage, cooked up an egg with cheese (omelette style), toasted and buttered a whole grain English Muffin, then assembled it all together.
Cream of wheat
Cream of wheat is such a fast meal, it cooks up in no time! Once cooked, I normally add butter, milk, and brown sugar. To switch things up, I added fresh raspberries and honey. The raspberries add a bold color to make it aesthetically pleasing to keep Mia visually attentive, and add extra texture. Mia rarely has honey, so it is always a welcome treat.
Breakfast QUESADILLA
This breakfast quesadilla was inspired by Mia’s love for omelettes and a few leftovers I had in the fridge. I had some pico de gallo left over in the fridge from taco night (minus the jalapeño for Mia), and decided add some to an egg, along with protein (I’ve done leftover chicken before, but here I used smoked turkey sausage), spinach, cheese, and light seasonings. After whisking, I added this to a buttered tortilla in a pan, flipping the other half of the tortilla, and covering. I thought Mia would have leftovers, but she had ate whole thing. Safe to say it was a hit!
Oatmeal
Some people think oatmeal is boring, but I could eat oatmeal everyday, and because of that, Mia eats oatmeal quite often. Since this is such a frequent breakfast, I tend to amp up Mia’s so that it is texturally interesting, and fun. I used Old Fashioned Oats (1 dry cup), and cook on a medium high fire. I want the oats to have a little bit of a bite to them, hence the high heat to allow them to cook faster. Once cooked, I add, olive oil (to add extra calories per advice from a nutritionist), blueberries, dried cranberries, butter, brown sugar, and cinnamon. There is nothing boring about this oatmeal!
