Whipped Caramel Coffee

Who doesn’t need a caffeinated pick-me-up?

I had therapy at 7 AM this morning (I promise I’ll get into that another time). Needless to say, I am not thrilled about 5:30 AM wake-up calls once a week, but alas, here I am. Trauma work is exhausting, not to mention, I never sleep well the night before, often falling asleep a few short hours before my alarm is due to go off. While on the 45-minute commute home from therapy, I decided I needed a caffeinated pick me up to help me through the rest of the morning.

I debated using my Starbucks stars, or even grabbing an everything bagel and macchiato from Dunkin’. Then I remembered a whipped coffee recipe I stumbled upon and decided to save $5.00 and make my own.

Ingredients

4 TBSP Instant Coffee

2 TBSP Sweetener

2 TBSP Hot Water

Ice

6 oz Milk or Milk Substitute

Caramel Topping

Directions

Combine your instant coffee (I used 6 TBSP instead of 4), sweetener, and hot coffee in a bowl. For sweetener, I used agave nectar, but you could also use cane or brown sugar.

Using a whisk, frother, or hand mixer, mix until the coffee becomes whipped. I used a hand mixer and the desired consistency was reached after about 3 minutes.

Set aside the whipped coffee, and in a glass or mug, add the caramel topping to the bottom, and/or sides. Next, add your ice cubes and milk.

Now, add in your whipped coffee and stir. At this point, I realized I did not have enough ice or milk, so I added more. Feel free to adjust quantities to your liking.
